BP and BBQ???

    BP and BBQ???

    Alright BP, spill the beans...

    I did up a big chunk of pit beef this past weekend on the smoker. It's the first time I did it and if I have to say so myself it turned out great. My wife and kids loved it too...

    I used a bourbon based marinade for about 20 hours and then smoked it until it was about 125 degrees internal. Nice and rare the way we like it. I used a couple of hickory chunks and it gave it a great smoked taste.

    I also made a bourbon based BBQ sauce from scratch but the jury is still out on that one. I prefer to use my old standby's, Famous Dave's and Sweet Baby Ray's.

    ok I am waiting for my primo oval ceramic bad boy and a traeger pellett somker and a ton of accessories.....I bought some good books too dr bbq, kirks mills etc

    I have the Big Green Egg, it's same principle as the Primo. I love cooking on that thing. Do yourself a big favor, look into a DigiQ II... You'll thank me later and you'll save yourself a lot of trouble for any low and slow cooks. I'll never cook without it.

    I also have Dr. BBQ's book, "BBQ All Year Long". I met him at a local EggFest last year. You might want to get "Smoke & Spice", that's what I started with and it has a lot of good info in it.

    Glenn, the Sweet Baby Ray's is a milder BBQ sauce, I use that for just about everything. When I want something spicier I head for the Famous Dave's Sweet and Sassy. It makes my bald head sweat. Kim laughs her ass off when I eat anything spicy.

    Fred, Sterling is quite a novice on the smoker. I've never seen so many wood chips go in a smoker in my life. He'll need some serious help and guidance with his new toys....looks like I'll have to come down to the desert.

    Darg,

    Think we can get BP to call the smoker "customer service" for guidance??

    Those extra wood chips are like extra string windings on a tuning peg, so unecessary, but almost always done by beginners.

    Don't worry BP, you can always call me... Once you get setup I'll send you a couple of recipes and instructions for ribs and pork shoulder. I also have a couple of really good recipes for chicken and whole turkey.

    I think I'm going to enter a couple of cook-offs this summer. My witty wife has come up with a name for our little endeavor and we're looking for an artist to put together the logo so I can have some hats, t-shirts and a banner made up.

    fred I know about the bbq guru but want to be able to cook a bunch of low and slo by feel first then I feel that I can go high tech.....Its kind of like you have to know th e rules to break them.....

    In my spare time I am reading and researching tons of stuff.......

    Fred, thanx man I'll check it out and see. I've been using Stubbs nice I first found it at the grocery store.
