The M-steels have nickel only in the core of the wound strings, which don't come into contact with fingers and don't cause problems.

Remember that guitar frets are most often made of nickel silver, which are approximately 60% copper, 20% nickel, and 20% zinc (and 0% silver, oddly enough).
