I switch between Super Slinky and EVh brand strings but man in the beginning it just feels hard to bend and metallic on the top E and G. Would love everyone’s input!

Your only answer is to go down in gauge. If everything else in the set is good for you, then Ernie Ball do a Hyper slinky Set, which is 8, 11, 14, 24, 32, 42, basically a Super Slinky set but with a lighter high E string and G string. But they also offer Mighty Slinky (8.5 - 40) and Extra Slinky (8 - 38).

I hated the Billy Gibbons super light gauge - awfull.
I use 9's and for my hands they are great. I also use 9's on a short scale guitar - you may like that option instead?
