Just got my SuperSport with humbuckers and a hardtail Piezo bridge - beautiful guitar but what's the best way to connect live? Do I need 2 cables? One from the piezo socket to the PA and another from the magnetic output to my amp? I've heard it's better to run the piezos straight into the PA but what's the easiest way? Have you had to tweak the EQ on the Piezo's at all?

The best way I have found is exactly what you suggested. 2 cables, magnetics to the amp, piezo to the PA. Another option is to use a stereo cable in the magnetic jack then split it further down the line. I am picky about my cables and that company doesn't make a stereo cable. So I go with the two cable system.
