Does EB offer a single coil option for the Bongo - I mean two single coils pups with no HB at all..

Doesn't exist, and I doubt it ever will. I think the response would be "You want a Jazz Bass, buy a Jazz Bass," or at least the nice Ernie Ball equivalent.

I really doubt that a double single coil Bongo would sound like a Jazz....

That big, fat mofo of a bridge humbucker is the heart and soul of the EBMM bass sound. Can't imagine what a single coil would sound like back there.
