My question is which of the three Wonder Wipes if best to clean the back of the neck. I'm guessing it's the Fretboard Conditioner and not the Guitar Cleaner?

The fretboard conditioner, but you'll want to wipe the back of the neck as dry as you can possibly get it when you're done.

EDIT Hey Bob. Use the WW Instrument Polish. Your neck is already sealed even if it's gun wax.
