computer music have an OEM sequencer which is free when you buy the mag.. not exactly intuitive but is free and they often have tut's as well as a bunch of other free/share ware and demo's..
What kind of price range and how complex did you want to get?
I'm sure any one of them will suffice for what you want to do. ProTools is arguably the most prevalent of these in professional studios. The 'pro' version of this software is expensive, but they do have a scaled down 'home' version that won't break the bank.
try acid if you just want to track a few instruments at a pretty basic level.... you can get a free 8 track version of the software from acidplanet.com
You could also try cubase LE (I think this replaced cubasis)...
Adobe audition a wave editor has a multi tracking functionality (well I assume it still does, I haven't used it since it was coo edit though).. and is a very powerful wave editing tool.
as I said before though freeware/shareware/demo's might be the best to start with. At least with demos you can try different applications and purchase the one you enjoyed using the most.
