Are you familiar with JerryP/FJA mods? He mods and repairs stuff, including morley wahs so he might be able to at least bring them back to life for ya 
The other thing to think of regarding a rehousing project like this is the difference in sweep. The ernie ball pedals have much more physical range of motion than the morleys and that's where it will get really tricky because the ldr/led/cutout assembly fits perfectly to that sweep range. Basically when the pedal up, the cutout isn't letting any light hit the LDR but when you start pushing down on the pedal, light goes through the cutout and hits the LDR. At the full toe down position, the cutout area is maximized to allow the most amount of light through so you have the maximum amount of wah effect. If you tried this with the EB pedal, you would also need to create a new cutout because if you used the stock one, your sweep range would be pretty short/limited and not taking full advantage of what the EB offers.
