The Sub1 guitars are the single pup guitars routed for 2 pickups or do they follow the usual MM practices of only routing for the required pup(s)?

I think I read somewhere on the forum that they're routed for 2 pickups, but I'm not 100% sure

I'm 100% sure it's routed for 2 pick-ups.

My Sub1 single pick-up inside:

All I know is, you need to get one

Just get a two pick up model. The neck pick up is sweet and in the middle position!
