What does turning the bridge post set screws (2) on a trem bridge do?

Thank you - why then if you have individual saddles on the string? I guess where I am going with the question is under what circumstances would it become necessary to adjust those?

the saddles are set to match the radius of the fretboard. The bridge baseplate should be a set distance from the body. The posts are for dialing in the base plate height. Then the final adjustments should be done with the saddles - matching the radius of the fretboard.
MM customer service can give you better specifics. I'm already saying more than I should.

You might want the trem to float and a tweak (altering) the posts (along with saddles, trem claw) will give you a "floater" to suite your needs.
On another brand of guitar which came floating, my mate wanted it dive only. The trem block was chocked with a piece of wood and the trem posts wound down a lot lower - so there's an example when a trem post would be altered.
On a JP 6 the trem plate should be flush with the body and a tweak on the posts will ensure this.
