What is the little screw adjustment on the trem block next to where the springs attach? I thought it was how you adjusted the trem arm and gave it a turn. Found out where to adjust the arm, but what did I adjust?

I don't understand that either. I just serviced a new Axis and all it seems to do is screw straight into the arm, that if you screw it in the arm won't 'clip' into the tension clip in the block (which is what wraps around the notch in the arm to hold it in the block. I imagine you could slightly tighten it to keep the arm from swinging so much but if you screwed it in too far the arm will be pushed out being held by the clip. I have no idea other than that.

It would be nice if EBMM included a diagram of what all the adjustments do, where they are, and what wrench goes there.

The grub screw on the bottom keeps the tremolo arm tight against the spring that holds it in place by not letting it go in too far.

So where should it be set? How do I know what the right setting is?

It's not critical at all. There is no one right setting only two wrong ones.
If it's in too deep it will stop the trem arm clicking into position. In which case, back it out. If it's too far out, the trem arm could be forced past the first click position, in which case, if you push in slowly, you'll feel a second click and the trem arm could be lower than desired. If that happens, screw it in a little deeper until that doesn't happen.
Then you can happily forget about it for the rest of your days.
Note: on the modern trems (Cutlass, Valentine, Sabre, StingRay, etc.) that grub screw is VERY short. It's easy to drop or lose it, or screw it past the threads and have it drop into the block and possibly out the other side, falling to your shoe where it bounces off your toe to places unknown.
(Have you tried looking under the bookshelf?)
