I have a question concerning the piezo connection

I know the best way to hook it up is with 2 separate mono cables through each jack to two separate rigs.
But is it possible to connect the guitar with a stereo cable to just one amp? :O!

No. A stereo cable will not feed one amp. You can use a mono cable. Place it in the mono jack an it will carry both may and piezo signals to your amp. You can toggle between them or blend with the switch on the upper horn. Your best bet is sending the piezo to a PA or acoustic amp or powered wedge. It won't sound great thru a normal guitar amp.
