I've seen plenty of posts about a loaded (insert the appropriate EB model here) and have figured out that a JP that I played at GC is a loaded one. What the heck does this mean? My brain is wondering if I hit the right pinch harmonic, is someone across the room going to be the victim of me forgetting to put the safety on.....

It means that all available options that are available to that guitar are present, just like a previous poster has stated. Granted "loaded" means different things for different guitars.

Loaded means getting roughed up by Bruno and Sanchez in Vegas, if that's what the dice are.

Since my involvement here somewhat coincided with the birth of my second son, I can't help but think of nappies when I hear the term "fully loaded". I was gonna post a pic at one time.........but I thought better of it.
