We're about to get an unprecedented heat wave here in the Pacific Northwest, temperatures possibly 108 in Seattle where I am. The PNW isn't built for this kind of heat and most of the buildings don't have AC. How should I store my guitars to protect them as much as possible? I can't really take them anywhere.

Up to a point, it's not the temperature that's a problem, but the speed of the temperature change. The guitar case is the best way to protect your guitars from that. Example: going from a cold truck to a warm warehouse for example, I'd leave them four or five hours before opening the case. In your home the temperature changes won't be too fast so they'll be fine.
Storing them in their cases is a good idea and don't leave them anywhere you would not be comfortable, e.g. don't leave them sitting in the sun or in a car on a hot day, or under the roof or attic where heat builds up. If they get too hot, the glue will start to soften and you could have big problems but that's gonna be over 120F with high humidity, or even higher temps with lower humidity, so not something you should need to worry about. Feel free to play them and adjust the truss as and if necessary. All will be fine.

My rule of thumb (that I adopted from somewhere some years ago):
Keep the instruments in an environment where you would feel comfortable.
This, and I second the posts above, specifically the case storage and avoiding quick or extreme changes.
