That looks amazing. I had never heard of roasted maple before. I found this from a google search. The next to last post says:

Ok, to answer all the questions; roasted maple has been put in a kiln at 300 degrees which carmelizes the sugars in the sap and turns it the color of walnut. It also smells good enough to eat when you are cutting it. I'm really anxious to use it in a project, maybe a cutting board.

Man, those roasted necks look awesome. I am going to have to save up some money to get an Axis with one, if they make it.
