You can mess up your string radius adjusting those.

The saddle radius should mimic the radius of the fretboard.
A way to set up saddles is to make up a cardboard template showing the radius of the fretboard, and then use that to get an initial set up of the saddles. Or if ya got money to burn Dan Erlewine sells metal ones

You can also measure each string from the bottom of the string to the top of the fret at the 12th fret and make sure each string is the same height.
That's been my method forever. Works fine.
