Has anyone tried stringing their SR 5 up - E A D G C - I'm thinking real hard on picking up stanky's fretless LE 05, but i'm not a big fan of the B string ... just wondering if anyones tried this with the SR and how did it turn out / ?

I've done it on my Bongos, both fretted and fretless. Works like a charm.

And, I believe Tony Levin has a 5 string fretless Stingray that he has tuned EADGC...

I have two older Stingray 5's strung like this. The only 5 I have with the compensated nut is the Anniv. and it is strung BEADG. The older ones without the compensated nut work fine. I also use a light guage though. I run 95 80 65 40 30 on the high C basses.

I was just doing a search for whether or not I could string a 5-string MM bass E-C and didn't realize that the fretless ones don't have the compensated nut. Is there a reason why? What kind of nut is on the fretless basses? I've been thinking about getting a fretless Sterling or SR.

I guess my rudimentary understanding of the compensated nut was so that every bass had the exact same string height at the nut (no human error possible) and I figured that for the fretless the nut would either be set a hair deeper or something to get the strings a little closer to the fretboard. But I have been know to be incorrect in the past (I cannot predict the future).

The compensated nut changes the string's length compared to each other and therefore compensates the intonation error. It does nothing to the action. In fact, you have some variance in string action there from instrument to instrument.
