I used to study with Dave LaRue a few years ago and sought his advice on this exact subject.
He suggested H/S for a four string and H/H for a five string. He thinks the B-string tone is better with the two humbuckers.
I then asked him about piezo option. He says it's very nice (yet another tone option) and if you can afford the price increase, go for it.
With his advice, I purchased a 5 string H/H/P and couldn't be happier.
