DT the spirit carries on from the Score DVD and hollow yrs from live in budokan.
2 amazing solos which sum up JP for me and hit the spot nicely!

have to agree completely on this one, everytime i watch the DVD's i go straight to these 2 songs :) aswell as Octavarium (razor's edge solo)

also:
Dave Gilmour - Comfortably Numb and Mother (very simple but oh so good)
Marco Sfogli - Andromeda! flipping amazing!
Andy James - E Lydian improv
Dean Wells - Black Circles (when you released that song on myspace i listened to it all the time)

there are probably more but i cant think of them at the moment

One of my favorite solos is by Tony Iommi (Black Sabbath). The last song on Mob Rules, Over and Over, has this incredible building solo that gets faster as the song fades out. Just an awesome guitar solo.

The anthem of guitar solos.:D

duuuude +1, that is the greatest metal solo period, I dont care if its not the fastest, nothing touches that shred, Cementary Gates gets close though.
Octavarium is my favorite JP solo, from the 7 string shred to the Jingle bell interlude to the haunting outro, that song is really what made me love music.
November Rain, amazing feeling in this song, longest solo for a song that ever made it to number 1
Comfurtably Numb Pulse version is without a doubt my favorite live solo
Buckethead- Too Many Humans, Nottingham Lace, Soothsayer...actually pretty much any solo he does.
When I was in 7th grade just getting into rock I can specificallly remember the 1st time I ever heard the Heartbreaker solo and my jaw dropped, I thought it was the most amazing thing I ever heard, that also hapened the first time I heard Toxicity, it changed my life, I didnt know music could ever be that heavy.

Aside from what would be the "most insane" on a technical level, here are some of my favourites...

EVH's solo on "Hot for teacher"
B.B. King "The thrill is gone"
Clapton's solo on "While my guitar gently weeps"
Gilmour's solos on "Time" and "Comfortably numb"
Chuck Berry's "Johnny B. Goode"
Jimmy Page on "Whole lotta love"
Jeff Beck "Goodbye Pork Pie Hat"

...plus hundreds more that I'm too lazy to think of right now...;)

I could think about this one all day, but here are a few that pop into my mind:

#1 Steely Dan (Larry Carlton me thinks) solo in Third World Man
#2 Michael Jackson (EVH) Beat It solo
#3 Yes/Steve Howe - Yours Is No Disgrace on the live Yessongs
#4 Jeff Beck - Where Where You (basically the whole song)
#5 Toto/Luke - I Won't Hold You Back

also I have lately really been listening to the guitar work in SKid Row's I Remember You - I think that is one heck of a masterful solo and a killer sound
