Ribs that is... Today I'm firing up the smoker for ribs.

I'll take some shots of of them after smoking for about 5 hours...

I'll be doing about 20lbs of boneless shoulder in a week or two. Are you up for some? :D

I'll have to post some pics of them after they came out of the smoker, Kim caught me while I was cutting them up. They were a hit at the party. I came home with 4little rib bones... not much for leftover lunch today. :mad:

5 hours over lump hardwood charcoal and 4 chunks of smoking wood, 2 oak and 2 cherry. I used a homemade rub and had a choice of 4 BBQ sauces, but some ate them without and raved about the flavor.

Next up, boneless butts, about 20 lbs worth.

Summer, BBQ and Balls. Life's good.
