Although I have let it be known that I am currently on the hunt for either a burnt apple or autumn burst SS, HSS, natural headstock, trem and rosewood fretboard. I don't think I'm asking for too much!

Mercedes? Uh...I don't know. I give names to my guitars. Maybe, there's something about the gold color that made me think of Mercedes-Benz automobiles.
Luckily my singer has his Black/Tort SSS which I get to play a lot.

Nice score, Rob, real purty. Have to chuckle at your growing enthusiasm with the instrument. You'll find that the humbucker cuts through any mix without excessive volume; same for the single coils.
Have you checked to see how many springs are installed in the trem system? Sounds as though there may only be two or so, and depending on the set up, that may not be enough to pull the bridge down to lay flush with the body. I load mine up all the way with springs, since I don't use the trem, and do a fair amount of chord bends. Turning in the claw screws may also be required, but I'd first check the springs. Once you stabilize that bridge I think the tuning issues will disappear. Naturally, adjust saddles once the trem is laying flat.
